Use a few small, wide-beam lights in the corners like the F18 3W fixtures or a .  The F18 3W can be run four at a time on a single port in Series because they have a low 11VDC LED Vf.  Remember, Series wiring, total the Voltage.  Parallel wiring, total the Current.  For other lights with LED Vf over 24V, run the lights in parallel.

The flat surface of wafer lights are ideal for this application as well but be careful how close they are to the wall as they will really light up to the sides.

Use a CCT tunable light fixture so you can adjust the mood for dinner or be bright and happy for breakfast.  LumenCache allows builders to use “CCT-ready” fixtures throughout a new home without investing in the tunable white drivers at time of construction.  The homeowner can swap CCT adjusting drivers in the closet panel themselves or contact their dealer for the simple service call.
